My matcha cheesecake recipe is just perfect for any occasion. Be it a birthday or graduation party, potluck dinners, picnics or dinner with friends, after-school snacks or breakfast. This delicious treat can be whipped up in less than 15 minutes and requires no baking at all! No-bake Matcha Cheesecake Recipe 1

INGREDIENTS (for 9″ pan)

Crust: 1 ¼ cup graham cracker crumbs (7 whole sheets) 2 tbsp granulated sugar ½ tsp kosher salt 6 tbsp unsalted butter, melted Filling: 16 oz cream cheese, room temperature ½ cup granulated sugar ¼ cup heavy cream, room temperature 1 tsp vanilla extract 3 tbsp matcha powder Matcha Drizzle: 2 tsp matcha powder ½ tbsp heavy cream 1 ½ tsp boiling water

DIRECTIONS (for 9″ pan)

In a small bowl, mix ingredients for the crust until evenly moistened. Press crumbs into a 9″ nonstick springform pan and set aside. In a large mixing bowl combine cream cheese, sugar, heavy cream and vanilla for filling. Mix with an electric mixer on low speed until well incorporated and creamy – about 4 minutes. Be sure to stop at least once and scrape the sides of your bowl so everything is combined properly. Add the matcha powder and mix just until combined. Pour the filling into your prepared crust and place in the freezer for 30 minutes. While your cheesecake is freezing, prepare the matcha drizzle by whisking together all the ingredients. When done chilling, remove from freezer and pour over a thin layer of matcha drizzle. Return to the freezer for another hour or so before serving.

INGREDIENTS (4 servings)

1 large baguette loaf, sliced thinly 1/2 cup olive oil 4 garlic cloves, minced 3 medium tomatoes, diced 2 tbsp fresh basil leaves Salt & pepper to taste Parmesan cheese – garnish (optional)

DIRECTIONS

Arrange sliced baguette on the baking tray. Drizzle with olive oil and sprinkle minced garlic on top, to taste. Season with salt & pepper. Bake at 400F for 5 minutes until slightly golden brown. Remove from oven and set aside. Toss together tomatoes, basil leaves, salt & pepper in a bowl – set aside. Top each piece of baked baguette with tomato mixture and shaved parmesan cheese if you like it! Serve immediately or refrigerate until ready to serve. Enjoy!

INGREDIENTS (for 9″ pan) 1 cup all-purpose flour ¾ teaspoon baking powder ¼ teaspoon kosher salt 4 tbsp unsalted butter, softened 3/4 cup granulated sugar Zest of ½ orange 2 large eggs, room temperature 1/2 tsp vanilla extract 3 tbsp milk

DIRECTIONS (for 9″ pan) Preheat oven to 350F. Grease or line with parchment paper a 9-inch square baking pan. In a medium bowl, whisk dry ingredients together. Set aside for later use. Cream butter and sugar in the bowl of an electric mixer fitted with the paddle attachment on high speed until pale and fluffy – about 2 minutes. Mix in orange zest on low speed, then add eggs one at a time followed by vanilla extract mix until fully combined On low-speed alternate adding flour mixture and milk until just combined. Pour batter into prepared baking dish Bake for 30 to 35 minutes or until a toothpick inserted into the centre comes out clean Cool completely before cutting.

INGREDIENTS (for 4 servings) 1 ½ cups all-purpose flour 1/2 cup granulated sugar 2 tsp baking powder ¼ tsp salt 3 large eggs, room temperature 2 tbsp unsalted butter, melted 3 tbsp milk 1 tsp vanilla extract blueberries for serving (optional)

DIRECTIONS (for 4 servings) Preheat oven to 350F. Grease or line with parchment paper a loaf pan. In a medium bowl, whisk dry ingredients together until fully combined. Set aside for later use. In another medium mixing bowl combine eggs and butter using an electric mixer on low speed until just blended – about 20 seconds. Add the remaining wet ingredients and mix until just blended at low speed add the dry ingredients mixture to wet ingredients until fully combined Pour batter into prepared baking pan and place in oven. Bake for 45-50 minutes or until a toothpick inserted in the centre comes out clean. Cool completely before cutting

DIRECTIONS (enough batter for 2 loaves) Grease or line with parchment paper two 9″ x 5″ loaf pans In the bowl of an electric mixer fitted with the paddle attachment, add ingredients in the order listed above. Mix on low speed until well blended & then increase speed to medium and beat the mixture for about 8 minutes Pour each loaf into a prepared pan. DIRECTIONS (for 4 servings) In a medium bowl combine the dry ingredients. Add eggs and vanilla extract to the dry mixture. Stir in grated zucchini. Health Benefits of no-bake matcha cheesecake

Matcha is the finely ground powder of green tea leaves. Full of antioxidants and vitamins, matcha has been associated with a host of health benefits. The intake of such nutrients as beta-carotene, lutein, catechins and zeaxanthin have all been linked to lower rates of cancer.
