Gluten-Free Banana Bread with Yogurt Recipe

2 ripe bananas
2 large eggs
1/2 cup honey or maple syrup
1/4 cup plain yogurt
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups gluten-free oat flour
1 cup almond flour
Line a loaf pan with parchment paper. Coat the pan and the parchment paper with vegetable oil.
Preheat your oven to 350 Degrees Fahrenheit
Cut your bananas into small pieces in a bowl and mash well with a fork.
Add yogurt, oil, honey, eggs and vanilla and mix well.
Fold in the oat and almond flour slowly to combine everything well.

For the cake:
3 large peaches
1 1/2 cups full-fat yogurt
1/2 cup olive oil
1 cup sugar
1 1/2 teaspoons vanilla
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ginger
1/4 teaspoon cloves
1/4 teaspoon nutmeg
Toasted hazelnuts, to garnish
For the Cinnamon Glaze:
1/4 cup heavy cream
3/4 cup powdered sugar
1/2 teaspoon cinnamon
For the Cake:
Heat the oven to 350 degrees Fahrenheit.
Grease a baking pan with cooking oil and line the pan with parchment paper.
Chop the peaches roughly to get around 3 cups.
Mix the olive oil, yogurt, sugar, vanilla and eggs together.
Next, add baking powder, flour, baking soda, ginger, salt, cloves and nutmeg to the mix and stir well until you get no lumps.
Fold in the peaches.
Pour this batter into your prepared cake pan and bake for 50 minutes at 200 Degrees Fahrenheit.
Remove when your inserted knife comes out clean.

Whisk the cream until it doubles.
