  • 1 1/2 cups graham cracker crumbs (about 12 whole crackers)
  • 3 tablespoons granulated sugar
  • 4 8-ounce packages cream cheese, softened (light ok)
  • 1 cup canned pumpkin puree (not pie filling mix) 
  • 1/2 cup packed brown sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  •  ½ teaspoon ground nutmeg
  • 1/8 teaspoon cloves (optional)
  • 2 teaspoons vanilla extract
  • 4 large eggs plus 1 egg yolk
  • Whipped cream, for serving.

For The Crust Preheat oven to 325 degrees F. Combine graham cracker crumbs and 3 tablespoons sugar in a bowl. Stir until well-combined and set aside. Add cream cheese and pumpkin puree to a large mixing bowl; beat on low speed with a hand mixer or stand mixer fitted with the paddle attachment until combined (a little lumpy is ok). Add brown sugar, salt, cinnamon, nutmeg, cloves (if using), vanilla extract, and eggs (and extra yolk if you want your cheesecake more yellow in color) and mix for 2 minutes on medium-low speed.

Grease an 8-inch springform pan with butter. Pour the chocolate mixture into the bottom of the pan. Pour graham cracker mixture on top of chocolate, and using a spatula or your fingers, spread out evenly

Bake for 15 minutes. Turn off over the n but leave the door closed and let cheesecake sit in the oven for another 20-30 minutes

Remove cheesecake from the oven and cool on the counter. Refrigerate until chilled, about 3 hours. Serve topped with whipped cream!
